PASTA WITH WHEAT GERM

The wheat germ is the heart of the grain of wheat, rich in flavour and nourishing active ingredients. The germ is normally removed when the grain is milled in order to improve flour conservation. With artisanal techniques the wheat germ is restored in to the flour, because it processes it immediately, when still fresh. An intense wheat aroma is released during cooking and the water is turns slightly green because of the presence of fresh wheat germ. This pasta is tastes good even when served with just a trickle of oil.
